Make ahead KORO'KE - Potato Croquettes

When you have a large bag of potato left over from another menu, to use them while fresh, this maybe a good solution.
Brush wash potatoes.  Poke some holes into potatoes with chopstick or with fork.
Add enough water to cover potatoes according to your pressure cooker's requirement.
Cook the potatoes.
Remove from pressure cooker once the pressure is back to normal.
Remove the skin and mash the potatoes.
Add precooked chopped onions mixed with ground pork or beef.  Not much - but as you like it.
Add some salt and pepper according to your test.  Because I like to dip my KORO'KE in thick Japanese TONKATSU sauce, I add very little salt.
Form into balls, then, into oval shape.

Get your deep fryer ready - preferably with temperature control set to 325'F.

Dipping Crust:
1 egg beaten with 1/4 C milk or water  or 2 eggs with 1/3 C milk or water depending on the amount of potatoes you have.
2 to 3 Cups of PANKO (crushed bread crumbs)
Flour to coat formed potatoes.
1.  Coat formed potatoes in flour.
2.  Coast in egg mixture.
3.  Dip in PANKO to coat all around.
4. Carefully place in fryer.
5.  Fry until golden brown.
6.  Remove to dripper or onto a plate with paper towel to catch excess oil.
7.  Serve while warm with dipping sauce of your choice.

I added turmeric and cumin in mine.

 Form them into shape.
 Coat with Flour.  Dip or Sprinkle on the Flour... whatever works.
 
 Beat the egg(s) and milk/water together.
 Add spices.  Looks like I added Hungarian Hot Paprika and Chili pepper.
 PANKO - bread crumbs.
 Dip the KORO'KE into egg mixture.
 Coat with PANKO.
 Set it aside and do the rest. 

 At this point, they can be frozen in a plastic bag in freezer.  Fry them as needed.
 Get the fryer ready. *Drop a tidbit of PANKO into the oil and see if it dances.  If it dances, the oil is ready.
Lower the KORO'KE gently into hot oil
 I am using Japanese frying pot.  The bottom section of the pot is narrower than the top.
 Fry till one side is browned.  Adjust the temperature as needed if not using the deep fryer with temperature control.
 Then, turn it over.
 Cool!  KORO'KE!
 Continue with the rest.
Cool to room temp+.  Enjoy!



Stir Fried Fennel Rice

Most of the time, I will slice the Fennel bulb and eat as salad.  During the winter time, I stir fry them with Basmati rice.
Pre-cook basmati rice.
Wash and soak Fennel by cutting the fennel stalk off the top, so they can fit in the wash basin.
Add some salt and soak.  Rinse several times.
Save the best looking fennel stalks and chop them up.  Yes, the hairy parts, too.
In a saute pan, add some oil and stir fry the chopped fennel bulb and stalk.  Add some salt.
Stir fry over medium heat for about 2 to 3 min, depending on your gas stove.
Add the rise and toss and mix and add any spice you like.   I just added salt and pepper.
Serve.
It's as simple as that.


Polly's COUSCOUS SALAD

I came across this recipe that is so simple and tasty that I stocked up on the nutritious Couscous.  Maybe you want to create your own version of couscous salad. 

Couscous Salad with Snap Peas with Chimichurri
Couscous can be purchased in batch or in pre-packaged box.
Ingredients:
3/4 C Couscous
1 C water
2 tsp avocado oil or your choice
1/2 tsp garlic cloves  smeared

1 bag of  Snap Peas - washed and chopped
Optional:  Parsley - Chopped 1/4 C

All oil and garlic to water in a pot and bring water to boil.
Add Couscous.  Cover the pot.  Turn off the heat.
Let stand for 5 min.  Fluff.  Cooled   It's ready.
A simple CHIMICHURRI dressing:
In a large bowl, combine
1 TBsp  Vinegar
2 tsp Oregano
1 TBsp water
1/2 tsp salt, a few grinds pepper
1/4 C oil

Mix couscous and snap peas together in serving bowl.  Add chimichurri dressing.  Stir to combine.  Serve with meat dish or eat as is.

I added Cumin and Turmeric in my Chimichurri
 Mix cooled couscous with snap peas.
 Ready to serve.

Couscous Salad with stir fried Shrimps
 Optional dish the other week I added is the stir fried shrimps.
 It was very delicious.
Prepare the couscous with snap peas and chimichurri dressing according to the top instruction.

Stir Fried Shrimps
10 to 15 tail-on shrimps - cleaned in salt water
Chop some green onions
1/4 C Ketchup
Ginger slice or ginger powder
1 TBsp Cooking oil to stir fry
 Heat frying pan.  Add 1 TBsp Avocado cooking oil. 
Ginger slice and green onion.
Stir.
Add shrimps.
Stir fry for a minute.
Add Ketchup.
Stir fry till ketchup is somewhat thick and coated all around shrimps.
Serve on top of Couscous.
